New Recipe Every Week – #1: Taco Salad

I’ve decided I need to liven things up a little in the kitchen. Like everyone I talk to, our family has fallen into a food rut. We eat the same things over and over and I’m getting bored of them. So I’ve challenged myself to try one new recipe a week. Nothing crazy or complicated, but something new. This week it was Taco Salad.


The moms were sitting there one afternoon last week and someone asked, “What are you making for dinner?” Laura was making Taco Salad and it sounded delish, and more importantly, it sounded like my family would eat it!

  • Ingredients:
  • Iceberg lettuce, shredded
  • Ground beef, made as though you were making tacos
  • Taco toppings: cheese, tomatoes, salsa, onion, anything you like!
  • Crushed corn chips
  • Ranch dressing

Top the lettuce with taco meat mixture, any of your fave taco toppings, crushed corn chips and drizzle with ranch dressing.

My family was hesitant, as they are with anything new, but once they took a bite, they loved it. Thanks Laura for adding a new summer staple to our cookbook! If you can offer my stuck-in-a-food-rut kids a new meal idea, please share! My family will thank you for it!


Matt: “Wow, this is good. I’ll eat this again.”

Elizabeth: “I just don’t want that white stuff on mine.”

Addison: “This is my best food eva!”
